You shouldn't be - it'll only start once you've pressed A! Unless you drop your 3DS or something, it shouldn't move without your input.

The animation starts once you press A. If the animation has started, you can stop it by pressing B. If you're away while the animation is starting and you can't press B, your Pokémon evolves.

I rarely use them offensively, as for the most part the extra effects from status boosting moves are super helpful. Like, Z-hypnosis not only boosts hypnosis's accuracy, but gives the user +1 Speed as well
