A character from that one anime that was actually cobbled together from clips of three different anime? I think? Which is kind of a crazy feat, I've always wanted to watch it just to see how they did it

It's not crazy of a feat as you imagine it. Literally each of the three parts of Robotech just corresponds to one of the three Japanese series it was adapted from. The first 36 episodes known as The Macross Saga correspond to the 36 episodes of the Super Dimension Fortress Macross, the next 24 episodes known as The Masters corresponds to the 23 episodes of the Super Dimension Cavalry Southern Cross (there's one more episode because the first episode of The Masters was a clip episode that used footage from the first episode of Southern Cross + clips from various Macross episodes to help aid in the transition from the Macross Saga to the Masters), and the final 25 episodes known as The New Generation corresponds to the 25 episodes of Genesis Climber Mospeada.

Really most of the changes come from having to actually connect the three originally unrelated series together.
