Probably because Noivern is Ash's Pokemon and also is likely to play a bigger role in the series than Sylveon who might turn up for a Showcase or two then disappear into obscurity like Glaceon before it.

I guess they mean seeing if everyone's theories turned out to be true or false.

Is this the episode where Eevee evolves or is that later on? If not Sylveon, what could they be referring to that Ash/Serena catches? Could it be a bouquet or something maybe, like some item only relevant in the anime suggesting a romance between Serena and Ash?
