I think the camera angle thing was something they had wanted to do for a while, if Black 2 & White 2 is anything to go by.
As for the 3D models themselves...there's one reason on why Pokédex 3D Pro exists - bringing new animations and new models to old Pokémon (heck, I even BOUGHT the damn thing and I completed all the regular challenges)!

Considering they're keeping on a grid, it makes sense for wild encounters and simplicity.
They'd have to rework the entire encounter system in order to accomodate full freedom of movement. Imagine how people could hack that system to make a centimetre of movement an encounter at pretty much every step...
