Since I'm rebooting my "Brock storytelling" series into a new venue (the cafe from Pokemon Cafe Mix), this thread is to introduce you to the main characters you'll see performing the stories and featuring in the "offstage plots":

The Basic Premise:

The newest attraction in Pallet Town is a cafe just for Pokemon (and their human companions) to relax, enjoy a meal or a drink, and enjoy some live entertainment from Ash, Misty, Brock, and Serena (who are billed as the Kanto Ramblers). Run by a lady named Leah and her Eevee Mint, Ash and the gang offered to play to help provide some ambiance and entertainment to the fledgling cafe, which Leah christened the Gentle Spring (after a river in the nearby park)

Every day is a new surprise for Ash and the gang, because they never know what sort of Pokemon will come to visit--but even the Machokes and other tough Pokemon have had their hearts melted by the beautiful traditional music and Brock's never ending supply of tales from across the Pokeworld. It helped that Leah and Mint enjoyed the music and the stories as much as the customers did.

Ash and the gang try to keep a well balanced variety of tales, songs and tunes--even the toughest Dragon type is often held spellbound by Brock's voice.

The Kanto Ramblers:

Ash: Flutes and whistles, harmonica, ukulele (rare), backup vocals. Usually plays the role of the hero in the stories.

Misty: Lead fiddle, backup vocals, keyboards (when Serena is playing fiddle). Usually plays strong female roles in the stories.

Brock: Acoustic guitar, lead vocals, harps. Usually narrates the stories and provides voices for any extra characters.

Serena: Fiddle, mandolin, accordion, whistle (rarely), backup vocals, dancing. Usually plays the heroine or the holy Delphox Kitsune in a story.

The Cafe's Pokemon Residents:

Mint the Eevee:

Mint is the face of the cafe, often appearing with Leah in ads for the cafe. She is often with Leah at the front of the house, greeting customers when they arrive, and bidding them farewell when they depart.

In addition to Mint, there are several other Eevees that help out wherever they are needed. Some serve as wait staff, some help cook, some help backstage for the entertainment, and some help the security Umbreons at night.

Storm the Jolteon:

Storm announces Ash and the gang, emcees the weekly talent showcase (Ash and the gang get a break on evenings that the talent showcase is going on), and fills time if Ash and the gang or a talent showcase act need extra time to get ready.

Aslin the Sylveon:

Aslin serves as Storm's partner in emceeing the weekly talent showcase--she maintains the signup list for the talent showcase, and builds the program out of it, so Storm knows exactly what to say for each act. She isn't too shabby a performer herself, often sharing comic banter with Storm if he needs to fill time.

Luna the Umbreon:

The chief Umbreon on the cafe security team, Luna makes sure the cafe is safe from thieves and troublemakers during the night. She is assisted by a team of Umbreons, Espeons, and Flareons who patrol other parts of the cafe, but it usually takes the red glow from her eyes and the blue glow from her shining rings to scare off any would be thieves.

Holly the Scorbunny:

The delivery-mon for the cafe, she makes sure that fresh ingredients arrive at the cafe safely, picks up packages for Leaf and the staff Pokemon, hangs posters advertising the cafe, and takes pictures and video for the cafe's Pokebook and Memogram pages.

Sophia the Espeon:

The chief Espeon of the tech team, Sophia maintains the cafe's social media pages, making sure pictures of the various dishes, video of Ash and the gang performing (and video from the talent showcases), and the latest promos and specials are put up regularly. Leah will often interact with Pokebook fans in a a regular post called "Ask Leah".

The Talent Showcase

Every Friday night, the Gentle Spring holds a community talent showcase for the cafe patrons and the residents of Pallet Town. While Ash and the gang usually get a break from performing that evening, they will serve as the backup band for folk acts, or play to fill time if there is a problem.

Storm the Jolteon and Aslin the Sylveon emcee the show, and will often exchange banter with each other, Ash, and the gang in between acts.

Leah puts out a signup sheet for aspiring acts to sign up every Saturday, and hopefuls can sign up until Wednesday. The cafe closes early on Thursday so Leah, Storm, and Aslin can audition the acts, and draw up a final program.

The rules and guidelines for the talent showcase, in Leah's words:

--Acts should be around 3 to 5 minutes--we will reserve the right to cut you off if your act runs long.
--Acts must be appropriate for a family show.
--No acts that involve a risk of grave injury, water, or fire.
--No lipsyncing--we want to hear your real voice.
--Participants under 18 need to have a parent or guardian's consent before auditioning.
--Participants are responsible for bringing their own instruments, recordings, props, costumes, and Pokemon. If you are having the Kanto Ramblers backing you, you must also bring sheet music for them (guitarists, keep capos in mind when telling the Ramblers the key you are playing in!)

The winners of the showcase get cash prizes, prizes donated from local businesses in Pallet Town, and coupons for free food from the cafe with an overall grand prize of 10,000 credits ($100) for the best act

The set of the Gyarados Hornpipe and "Ninetales' Blessing" is known as the 'Emergency Set', because Ash and the gang only play those two tunes together if there is a problem backstage or other emergency. They also will not play those two tunes together in their regular performance for exactly this reason--cafe patrons know that if Ash hurries backstage and Brock and the girls play the Emergency Set, something is very wrong offstage.
