I have a problem with making regional forms cooler and/or more useful than their original forms, and regional evolutions are the epitome of that. I miss cross-generational evolutions, since they were a natural way to give a Pokemon a new lease on life.
As far as Galar is concerned, I think that the only justification for new variants are the industrial city, medieval city, and the mushroom forest. The problem is that the routes themselves don't look very special. Then again, most of the Alolan variants weren't tied to Alola's uniqueness...
