Do you believe the theory that Virizion was originally going to be the evolved form of Shaymin?

Nah. If the progression was really Land->Sky->Verizion, that'd either mean that
  • Sky Shaymin wasn't designed as a Flying-type
  • Verizion was designed as a Flying type
  • Both were designed with their original types, and the line would go Grass->Grass/Flying->Grass/Fighting
None of these options seem likely to me.
 
I don't think they look even remotely similar aside from the colors, but lots of Pokémon share colors and it doesn't mean that there was ever a connection.

And I mean... is it not thoroughly more likely that Virizion was simply designed alongside Cobalion and Terrakion?

Yeah, that's what I think, too.

By the way, wasn't there data on Diamond/Pearl for an alternate forme for Shaymin? I seem to recall that's how we knew Shaymin was getting a new forme. So in other words, there's no evidence of a connection between Shaymin and Virizion.
 
The color scheme and the deer look seems similar. I think there's a chance they came up with a bunch of designs for Shaymin or Virizion and at some point they decided to split it.

I think they meant Sky Forme Shaymin. I doubt the theory, but I think Virizion may have drawn inspiration from Sky Forme.
 
Honestly, the sky form does look like it could be a pre-evo for Virizion... like the scarf area, the color scheme (white, green, redish pink), the fact that the ears stick out, the way the butt fur sticks out, the fact that they both have boots... while they don't look perfectly alike, I think that's the norm for most 3 stage starter evolution...

They honestly have way too many similarities...

And while their types don't fully match, that could have just been changed later on...
 
I don't know, considering Shaymin apparently existed from the start, even existing before Giratina was finalized, but then again, they did possibly recycle Qwilfish's evo for Whiscash and and an eel Pokémon for Huntail, and that's not counting how Shellos and Gastrodon were just pushed one gen forward.

I remember a rumor before Platinum released (I think it might've been during the pre-release after Platinum was announced though) about there being a Sky Form Regigigas and an Ice Form Shaymin, but that turned out to be half-wrong and we just got Sky Form Shaymin (sounds like whoever posted that rumor got some things mixed up, possibly confusing Sky Form Shaymin and the Regigigas Toys 'R Us event).
 
I remember Sky Forme Regigigas, but the places where I used to hang out only mentioned Sky Forme Shaymin... Although it might have been an extremely lucky guess considering the movie's title.
