Good Starter team for LG: Eevee?

So I want to restart on Let's Go Eevee, but so far all I know is that I'm going to have a Modest nature Partner Eevee, then catch a Timid nature Pikachu. any other suggestions for a beginning team? Natures mean a lot to me, even though I only play casual.

If you didn’t have one in a previous playthrough, have you considered either Bellsprout or Bulbasaur? You need to catch a grass-type to get into Brock’s Gym anyway and they cover Pikachu’s Ground weakness (some....)
