While I'm waiting for the OST to drop on iTunes to give my final verdict, from what I've heard so far it has the potential to dethrone S&M as my favourite.

The champion battle music also has some bits from the title screen music too.I like that, because Galar doesn't actually seem to have a formal Hall of Fame, the signature music instead gets remixed as Leon's battle theme (and is it just me or is there a bit of the Frontier Brain music in there as well? I know Bede's battle theme similarly borrows a melody from the PWT finals theme).

I agree, the gym leader music is probably my favorite in the game. The Gym Battle theme is certainly my favorite track, especially the first part. It makes me so pumped every time I go face the Gym Leader.
I also like how it changes tempo depending from what happens during the battle, like a Pokémon being OK’d or the Gym Leader being left to their last Pokémon.
I’ve seen that the cheering part is a bit polarizing, but it truly makes the whole Gym challenge feel like the real deal. Like you don’t want to disappoint your fans.
It’s easily my favorite Gym Leader theme so far, with the Gen 5 and Gen 6 being close seconds.
Isn’t there only one track from Toby Fox though? TPCi released it on YouTube before the game release iirc. The thing that surprised me the most was that Toby Fox worked on this soundtrack, since I actually really enjoyed the soundtrack from Undertale.
