Because if it went to Ash it would appear even less than it did in the episodes before this one because it's not named Pikachu. While many of Gou's Pokemon have the same problem his other Galar starters at least appear regularly.
Appearing=/=Development. Sobble is evidence. And I don't think Poipole is named Pikachu.

In similar way as Scyther, Sobble, Magikarp, Scorbunny/Raboot/Cinderace and others did.
They didn't. And if they did aren't they enough? I don't think that is a good reason for Goh to get it. Then Ash need sto understand them too and so does Chloe.

Ash already understands Pokemon well enough, because he aims to be a Pokemon Master. He is not newbie to be dim about Pokemon feelings. Chloe already has Yamper and Eevee to understand them (maybe Galarian Ponyta is reserved for her as well). And Goh's Pokemon... oh, well, if you don't count his interaction with them same as other characters' ones then my explanation won't affect your point of view.

Even tho Goh caught it it wasn't that bad. I enjoyed it.

So Goh should have caught Dragonite, Gengar, Dracovish, Riolu and G-Fetch'd so he could ''understand'' them?

At least an old (anime) rule is shown again. If a pokéball breaks, the Pokémon is released.

Still... In some way it feels like theft. At least it was Grookey who broke the pokéball and he wanted to leave TR and joined Goh out of free will. The ballance it out a little so it's not fully a theft.

But I like the episode and it's not bad Grookey went to Goh. Hope it will be happy (and some development). Also, it would be fun to see it's personality play out against some other Pokémon, like Sobble. (Although we had something like this with Darpantian. How would this prankster react to this new addition? Or a fight for food between Grookey and Greedent. There are possibilities. Hopefully the writers take some.)

So far.

I don't really care who gets caught by whom that much, but I'm not ruling out the posibility of getting some dupes in the main cast (also a shiny starter would be rad, we haven't seen any shiny starter in the anime and it would be a nice first).
Honestly, I can’t be hopeful of that. This is a series that would have been perfect for giving Ash more than a 6 Pokémon team but they seem to show no signs him changing up his team. It really feels like the writers are prepared to basically have Ash’s team stagnate from here on out while giving everything to Go.
