Kofu's Gym Challenge

Since we end up helping him obtain some seaweed as our Gym Challenge, we never learn what his challenge is. What do you guys think it would/could have been?

tbh i like to imagine he genuinely did not have anything else planned and he just came up with the auction thing as a cover
that or perhaps something to with his restaurant but gamefreak decided that two gym challenges in one game involving restaurants was enough (especially since if you played the game linearly, they would be back to back)

But the difference is that Larry's challenge involved solving a riddle. Really didn't have anything to do with cooking.

Honestly, I’m not sure, I haven’t challenged him yet.
I think I’ve been to Cascarafa (correct me if I misspelled it) before, but the last thing I remember doing is buying food.

My dumb little on the spot headcanon is that in universe it would be fishing related, but given they removed fishing altogether in SV, we just conveniently come across him during the auction thing so we don't need to do the non-existent fishing lol.

Perhaps making sandwiches and delivering them to customers?

And maybe once you have to deliver specific sandwiches to his customers, perhaps you have to battle trainers if you give them the wrong delivery.
