I don't think we'll be back to HMs either, as I said I also think we'll have something like Poké Ride (and maybe something like soar). But I think that rideable Pokémon like those of Let's Go is unlikely.
Let's go Kanto was more free-explorable (comparing to Galar), you could go to more places on the map. Like, inside the city, almost everything was explorable, for example. In the case of SwSh, it seems less free. We have mountains that we probably will not be able to totally explore. And right on the first routes, some fences prevent you from passing to fields, as we see in the trailer. The perspective of the Let's Go camera is also different, so in the case of SwSh I think everything would be weirder in the case of invisible walls. And in Let's Go we had only 150 Pokémon, with no one really large (in fact, some had its size reduced). In SwSh, we will have the 800 again, that includes the legendaries, Wailord, etc.
There's a rumour going about that May 10th will be when a reveal trailer will be coming out. (Note that Detective Pikachu would be out in Japan for a week by then)

Although there are also totally invisible walls in Let's Go (I didn't play Let's Go yet, but I sure I saw on some on a stream), the top down view perspective and the "symmetrical" routes makes it intuitive to the player where it can go. While in SwSh, we would have this:

That would be totally counterintuitive. All players would try to do that, and they would get frustrated. Not only does the camera's perspective allow you to see the entire field as it was open to you, but also there is something there that players would like to inspect and could not. With the trailer and the map, we can note that many areas of this game will be like this (you can tell that by the low quality textures used on distant objects).
So, I really don't think we'll have rideable Pokémon like Let's Go (where you can pick any Pokémon and fly away). Following Pokémon maybe, but even so I think it's unlikely too.

For LGPE it was a major feature and a callback to the original Yellow version. For these games, if they did include it, it would have been distracting from the region itself, which was their main focus back in February- hence why we have no information now aside from the starters and what the region looks like. If it was included, it could still be brought up as one of the games' minor features later on.
Why would multiple shots mean that they had to turn the feature on at any point? Aside from the random encounter and trainer battle (necessary to prove that SwSh is a traditional pokemon game), most of the shots were just showing off the region. They wouldn't have wanted us to focus on the following feature if they had it. To be honest, though, I haven't played LGPE so I just now went to look up how flying was in that game and found the flying high feature, so I get what you're concerned about there. I do think that riding pokemon should still be doable in this game without that (though cutting a flying feature always sucks) and I would find it extremely preferable over a boring bike. >=/ Come on, GameFreak, stick with the poke rides.

Because they're trying to give us a gorilla, I assume, and that's easier to make look more masculine than feminine.You know this may just be me but I have to wonder why are all the Grookey evolution art rumors always look masculine. I mean you would expect some of these to look feminine if only to try and make use of the Feminine, Cool, Beastly starter trio pattern theory.
