For me:
1. Electivire (He looks like movie 'Bee...)
2. Palkia (My first Pearl shiny.)
3. Roselia (Purple and black roses ftw!)
4. Tangela (It deserves a mention; it was my first.)
5. Gardevoir (She just looks awesome shiny.)

Honorable mentions:
Skitty, Eevee, and Metagross. Though honestly, I love almost all shiny Pokemon. :awww:
