Strictly speaking, the odds against there being no fossils whatsoever in Alola is very low.
They might not have unique fossils, but I'm sure they have some fossils.

Even if Alola itself is not, the water surrounding it certainly is. Besides volcanos can preserve things very well, so there is a higher chance of some sort of fossil existing.

Apparently, on some strange planet named "Earth," volcanic debris and being buried under ash for over a millennium perfectly preserved the city of Pompeii after us was lost due to a volcanic eruption.
also, the people who were buried under the ash were also preserved
