First of all, although I give some credit to the Norse ideas because I thought they made sense at first too, I gotta say that Yveltal, Xerneas and Zygarde can all be explained with just alchemy and related concepts, you don't even need to bring Norse mythology into it if you don't want to.
You are right that 50% represents the Ouroboros and the cycles of nature and seasons on Earth, therefore Order, Infinity, Immortality, etc., because the cycle endlessly repeats itself over time and never ends. It also connects to aether in that sense, since it is a balance of the four elements in harmony, and balance is necessary to maintain the cycle, hence why Zygarde keeps "the Order".
To me, the other formes can be explained in the following ways.
The Cells seem to be a reference to the life force that exists in everything in nature.
The Cores are Red and Blue, representing the Ida and Pingala serpents, the watery inactive female energies and the fiery active male energies.
Both Cells and Cores are basically Planarian Worms, which are essentially immortal since they have amazing regenerative capabilities, and if you cut or divide them, each of the parts will just become its own individual or even meld back together, while retaining the memories and experiences of when it was whole. Moreover, their mouths are generally located around the region where the Zygarde Cores have their core, and all individuals are hermaphrodites, male and female at the same time. There are a few species who can do photosynthesis like the Red Zygarde Core, and some species who have a greenish coloration too. Finally, most of them can be found in dark and wet places, which the Terminus Cave seems to be.
Then 10% forme could be a reference to the dog and wolf symbolism of alchemy, since the Red Core can represent the metal antimony and the chaotic forces of nature of the wolf, while the Blue Core can represent the metal mercury and the benevolent forces of nature of the dog. Together they make the complete forces of nature.
The Perfect Forme is the hardest to explain, but could technically be the three-headed dragon, which sometimes represents the Philosopher's Stone itself, or in this case the body made spiritual and the spirit made corporeal, explaining the human-like shape. The "serpents" on each of its sides are a reference to each core, which you can understand above already, I guess. They can also be seen forming the other two heads besides the central one in various footage, and represent something equivalent to the two snakes on each side of the Caduceus staff or the Ida and Pingala serpents, for example. Moreover, the fact Zygarde’s head looks like a crown and has a third eye, also supports that it’s an ascended being, with the white "third eye" possibly referencing the Sushumna I talked about a couple posts above or so, which would equal the central staff of the Caduceus and the balance of elements. They could even be drawing from things like the Rainbow Man petroglyph, or Indalo, which can signify good luck and the grace of the creator, and has been found both in Spain and Hawaii, among other places. In summary, Perfect Zygarde is a sort of master of the Earth's nature, energy and elements, I guess.
For those worried about having only 80 pokémon, I think it's still a bit too soon to say for sure, even if calculations might partially support the idea.
There are currently 53 new pokémon announced, and at least 19 hinted at via various things, and another 2 mythicals theorized besides Marshadow and Magearna.
That puts us at 72, and there still should be some more evolutions coming, at least some 6 or 7, which when coupled with some possibly still hidden pokémon, could easily bring the total above 80 at least.
We also don't know if the Ultra Beasts will have a "pokémon forme" or not, which might make them catchable and essentially another 7 pokémon, I guess.
So all in all, excluding Alolan Formes, we might be looking at around 90 new creatures if we get lucky with it.
