Facts to be considered:

Leaf was first (and last, at least officially) used in 2018 when Kotobukiya made a figurine with her and squirtle.

Even though unused data pointed her name to be 'Leaf' in the games, using these hidden placeholders has been unreliable on other titles (Red>Ninten; Barry>Cedric, Elio>Kai*, Selene>Lana* etc.) (*Data existant only in Japanese)

Her outfit on 'Let's Go' is also a bit different from FRLG as it was adapted to match Red and Blue newest designs that follow their RBY appearance more closely.

Consistency-wise, having Red, Blue, and Green is better than having Red, Blue, and Leaf (on japanese it would switch from Red, Green and Leaf to Red Green and Blue! (officially) used only in 2018 when Kotobukiya made a figurine with her and squirtle.

When characters based on her were named on official media they ALWAYS used 'Green' (Blue in Japan).

So, what do you guys think?
 
Think of it the same way that Gold was renamed Ethan on the Bulbapedia page. He was called Gold (or Silver) in the original Gold and Silver game. But then GameFreak decided to give him a new modern name Ethan. And that's what Bulbapedia went with.

Leaf, for the longest time, has been a fan-nickname based on dummied out data. It's no different from Silver (Giovanni's Son). While it's true that a figurine does use Leaf, I believe that the games have top priority. If the games decree that the female trainer is Green, and that it's clearly meant to be Leaf/the unused playable female trainer, then I see no reason why we shouldn't rename a character with an obscure name based on a technical canon.
