Kiawe had his Z-Ring before the series even started and Lillie hasn't mastered hers yet.
She had the pose, and mantra down, and was able to summon the Ultra Aura

Most of the fault lies with Shiron, who's got about as much battle experience as Poipole
I think Twilight was referring to Kiawe and Marowak mastering their Z-move, since most of the training for that happened off-screen iirc.
Kiawe mastered Supersonic Skystrike out of the blue with no prior experience as well

Ahh... but you see, that's different. You said (or, at least, that's what I assumed you meant) that he trained off-screen to master a Z-move. But with Supersonic Skystrike, he didn't even train.

The sentiment still stands - getting power-ups out of nowhere with no buildup or challenge (And no, the various trials don't count)

An episode where many characters practice their Z-moves is actually a good idea. But I'd have done it at the start of a filler arc rather than in the middle.

It's a shame Ash doesn't have any Z-moves left to train here. Interestingly, Lana could have one if Brionne evolves in SM120.

Ash hasn't perfected Corkscrew Crash yet. He said in 115 that he and Pikachu needed to make Iron Tail (the base move) stronger so they could pull it off properly.

If everyone is involved, Ash would most likely train to perfect Corkscrew Crash.

Alternatively, while Kiawe is training Sophocles, Lana could train Mallow and Ash could train Lillie.

That... isn't actually true. He pulled the Z-move off just fine, it just wasn't strong enough to take out Golisopod, so he's training with Pikachu in order to make Corkscrew Crash stronger (by making the base move, Iron Tail, stronger), not to master it or perfect it or however you want to call it.

We could be seeing everyone training here, despite the picture showing Sophocles and the episode title mentioning Kiawe:

Lillie will be practising with Snowy.
Sophocles will be practising with Vikivolt.

But we might also see:

Mallow practising should she gets the means to use Z-Moves in episode 121.
Lana may need to practise the Primarina Z-move if she doesn’t use it the episode before.
Ash and Meltan should be able to use the Steel, Electric and Normal Z-Moves.
Even Kiawe and Charizard still haven’t pulled of the fire Z-move (Although they had no trouble pulling of the Fliying Z-move with no practice)

Summary and staff list courtesy of Dephender on Serebii:

Satoshi and the others are going to train Z-Moves for the Alola Pokémon League at Kaki's house. Kaki's partner Bakugames is acting like a big brother to everyone, helping Kuwagannon train and calming down the mischievous Garagara. And Satoshi and Māmane get to learn what happened the day Kaki and Bakugames ended up getting acquainted with each other.

Would be great to see, not keen on seeing new main characters appear with Pokemon on their possession with little backstory
Yeah. Misty's Staryu, Starmie, and Goldeen, Brock's Geodude, Tracey's Venonat and Marill, and Clemont's Magnemite and Magneton never got any sort of backstories. With Clemont, it can be understood since those two weren't really given that much focus anyway and were just Gym Pokémon he and Clembot use, and the others were introduced during the original series, which wasn't always exactly the best at giving Pokémon memorable characteristics or backstories.

Yeah, Tracey barely had any focus, Misty's Pokemon got little development, same with Geodude
