I thought his appearance was one of the main reason so many people could see him doing Musicals, not being a waiter. I'm also confused as to why people a waiter makes you think that he has a good chance of doing Musicals. I've also looked through Serebii and Pokebeach and I did not find anything in the recent scans of Coro Coro that says Dento enjoys watching Musicals. They only mentioned that he is the first Gym Leader and you need to answer questions about Pokemon type compatibility in order to challenge him.
Dento can easily do musicals/contest, he's even appropriately dressed for it. xD
Maybe the reason why he needs two jobs is so he can have enough money to pursue Pokemusicals?
First off, I didn't mean that being a waiter meant he was likely to do contests. I meant he was dressed formally because he is a waiter.
Secondly, It was posted on Pokébeach a while ago when we first ever heard of Dento. I know about it because when traslated off the crocro scan there was an odd translation that said that 'Dento cocked Aloe' and if you check in one of the threads here--> http://bmgf.bulbagarden.net/forumdisplay.php?f=392 you should find it.

If anything, I imagine Dento tagging along with Ash to discover the culture of the rest of Ishuu. Also, he's described as being great at discerning the relationship between trainers and pokemon. This correlates well with his job as a sommelier, testing the combinations of fine foods and wine. I see him as an observer, more so testing the trainers they meet, and finding what new combinations exist in the world.
Now we have Iris, described as a 'wild girl' who happens to own a Kibaggo (likely this generation's base form to a dragon-pseudo-legend like Dratini/Dragonite). Why is such a young girl out on her own carrying around such a potentially strong pokemon with her? Furthermore, she doesn't keep it in a ball either. This could mean she just prefers to walk with it, or maybe she doesn't consider herself as its 'master' and rather just a close friend. I think there's a lot more to Iris than meets the eye, and she'll have much more of a part to play with the overall plot rather than just being another trainer or coordinator.
