After watching the 20th movie again and seeing that scene where Ash was in that black and white world made me wonder. What would the Pokemon fandom be like without Pokemon in it? I know, it wouldn’t even be Pokemon, but it would be called by some other name. I’m thinking it would just be some type of school anime. And Professor Oak would study animals instead of Pokemon.

Now, to (not really) answer your question...
What would the Pokemon fandom be like without Pokemon in it?
This is an interesting topic. Originally, I was going to say non-existent because one of, if not the biggest draw of Pokemon are the titular monsters; without that, what do you have? But then I thought about it some more. Pokemon really kicked off the monster collection genre, no? If you removed some of the more fantastical elements of the series and the monsters, and replaced them with regular animals, but kept everything else the same, would the franchise still have the same, or at least similar, pull? It'd still be the same concept with the same mechanics that have (mostly) lasted the test of time, just a bit more mundane.
 
If Gamefreak had decided to not actually have any Capumon in the Capumon series (making the title metaphorical) and have just a story about average Japanese kids fighting the Yakuza, then it would have had a slightly different audience and been marketed slightly differently, Red and Green would propably use weapons to fight each other and Team Rocket. The Gyms would'nt exist but there would be some side characters related to quests. PokéSpe would be a bit different, and the anime would either be closer to PokéSpe in tone, or an adaptation to PokéSpe. Perhaps Red, Green, and Blue are part of an organization named Capumon\Capmon and Oak is the leader, and Green becomes its leader at the end, the final battle is Red taking the Capmon leader title from Green.

Capmon 2 would be like the beta, with each city being based on and named after a region of Japan. It would follow Gold and Kris in their footsteps to advance as members of Capmon. They battle Silver who is Giovanni's follower as Team Rocket Leader but who then ends up taking a face heel turn and join the Capmon instead.

If they make Capmon 3 gen the map would be the whole planet and it would be about how there are Capmon in every country. So there is a Capmon base and then there are cities meant to represent each countries, there are no routes, you use an helicopter to fly around. There would be a team aqua and magma but they would be using technology instead of legendaries.

Capmon 4 would be a sequel with the same map but new countries introduced, and the villain this time wants to reset the universe and make an universe only of himself and his team.

Capmon 5 is in 3ds instead of ds, and it's released closer to our 6th gen. The new villain wants to be immortal and take over the world.

Capmon 6 is on the switch, released closer to our 8th gen, and it does'nt really have a villain this time, instead there is a corporation that wants to buy Capmon and who already has its own unofficial Capmon under another name.

Art style wise it would be like Persona and Danganrompa.

If Arceus had made the world but had not put other Pokémon in it, there would be various animals to fill the niches of Pokémon, those would be similiar to our animals but more animesque and often with more unnatural colors and patterns. For example instead of Pachirisu you could have a kind of squirrel breed that resembles Static from Animal Crossing. So it becomes some kind of fantasyish yet modern anime world.
