Gyms should move on and start focusing around different strategies (a weather one or two, Trick Room, Inverse, Doubles, Rotation, maybe a stall one, also a hax one with Serene Grace Togekiss Air Slash + Twave spam, Prankster Swagger spam).
The type representative angle has been done enoughplus then Dark will never get a gym!. So I'm all for them approaching them differently it we're to keep on with gyms being the focus.

i think the only issue with using more competitive-themed teams is that they have a strong chance to become either too challenging or equally as boring. after all, since gym battles are singles and the AI doesn't switch, most of the themed teams wouldn't work or would require the AI to constantly waste a turn to set-up rain.Yes, i want. I'm sick and tired of the monotypes Gym Leaders, makes pretty much every gym leader easy to sweep. Gym Leaders with a rain team, sun team, sandstorm team, trick room team and so forth will add a much needed challenge to the main series.

Say for the sake of example there was a rain team - they would be mostly water types anyway (with maybe a Weather Balling Roserade or Vanilluxe thrown in for good measure). I don't see why 'theme' necessarily has to replace 'type'. In fact if both are present that just makes for a deeper battle strategy.
Also i'd really love to see a different kinds of battle as themes (e.g. doubles, triples, rotation etc) which doesn't necessarily rule out 'type' either. You could even have a rain team triple battle where all or most pokemon involved are water types.
As for mixed-type gyms, well I'm torn. On the one hand there's the points i just made, but on the other the 'type' gyms are kinda really played out and predictable. There's no element of surprise because the game usually tells you before you enter the gym what type the gym specialises in.
I think focusing on different stats would be cool too (an all-out speed team, all out physical attack etc) because you'd really have to prepare differently for something like that.
