how do stats work? like if you don't evolve your Pokémon for a few levels after it should, or you manage to do so before you should, will it be any weaker or stronger at level 100? I know it's probably a dumb question, sorry.

Not really, stats are more or less set in stone depending on the species, EVs, IVs, etc.

Evolving it earlier or later won't affect anything.
